Upgrading the British Governor’s Residence

Authentic Swiss Master Chefs from Switzerland to celebrate Swiss National Day at 2010 Swiss Food Festival at MLH

Leaving the mountains, lakes and valleys where they are, Chef Siegler Serge and Fery Stockbauer brings the best of Switzerland to Sri Lanka to celebrate the founding day of the confederation.

Mount Lavinia Hotel will celebrate a week long celebrations particularly the day dedicated to the founding of the confederation, from 26th July to 1st August 2010.

After last years success, the Mount Lavinia Hotel relaunched the Swiss Food Festival, this time featuring master chefs from Switzerland. Leaving the mountains, lakes and valleys where they are, Master Chefs, Siegler Serge experienced at the Beau Rivage, Chalet Du Lac and Hotel De La Paix in Lausanne are just a few. Certified Master Chef Fery StockBauer who is indeed the Executive Chef at the Swiss Culinary School in Montreaux whose experience lies at the Hotel Ma Vallee Nax in Switzerland , Sheraton Hotels across Europe brings the best of Switzerland to Sri Lanka. Chef Siege and Fery have artfully shaped an authentic menu inspired the regions, using the freshest and finest of Swiss produce. Festival guests can sample dishes like Papet Vaudois, Omble Chevalier in white wine sauce on fennel, Malakoff, Fricassee de Porc genevoise and Tarte au Vin blanc along with other classic dishes from the beautiful Romandie region. Siegler will also prepare the traditional dishes of Raclette(melted cheese) and Swiss Cheese Fondue menu to satisfy everyone of one’s cheese cravings. And where would a Swiss Festival be without chocolate? To cater to this necessity, guests will be treated to a Swiss Chocolate Fondue and many more Desserts that are synonymous to Switzerland.

A Swiss menu will take place during lunch starting from LKR300 to LKR2500 per person. A Swiss Dinner Buffet for LKR2000/+++. A selection of fondues (both cheese and chocolate) for both lunch and dinner will cost LKR1500 per person. The Slow Food Dinner with food and beverage on 31st July will be LKR2500 per person.

Presidential Awards for Travel and Tourism 2009 driven by the Ministry of Economic Development in partnership with Sri Lanka Tourism recognized and rewarded excellence among industry stakeholders on 15th June 2010.

Among the award recipients Chef Pubilis succeeded in attaining a Tourism Legend award for 2009.

Today Pubilis has become a household name. He is as big as Mount Lavinia Hotel. Ape Kema on Sunday nights at the Governor’s Restaurant is all about his cooking. His service for the Hotel as well as for the entire hotel industry spans an amazing period of FIVE long decades. During the last 50 years the Hotel has given him the opportunity to grow and he has embraced all prospects that were afforded to him very well. Chef Pubilis has worked tirelessly to bring back the lost art of Sri Lankan cooking particularly among the busy upwardly mobile urban households. They flock to the Mount Lavinia Hotel when Pubilis is behind a Sri Lankan Food Festival. He knows extremely well to please the Sri Lankan taste buds and palette as well as those who are strangers to our food. He has been instrumental in and contributed much for publications on Sri Lankan food and recipes. The media often invite him to make presentations and talks on Sri Lankan Food as he has become an unchallenged authority in this area. There is little doubt as to whether there is any one else in the history of our country who has taken the intrinsic values of Sri Lankan food and promoted it across borders like Pubilis.

Publis has not allowed anything in the world to deter him from serving his country and the Mount Lavinia Hotel. And that he has served well not just as a simple minded unassuming Chef but as a Ambassador of Sri Lanka and Mount Lavinia Hotel.

What’s the best place for food, wine, and entertaining to the White House? Mount Lavinia Hotel has it all when it captures the greatest tradition of Spain; flamenco dancing and the unique culinary creations served at the White House.’

“For the last eleven years, I have had the honor of doing daily what most chefs would be lucky to do once in their life time. That honor was serving the First Family of the United States”. These are the words of Walter Scheib as his forte lies in serving up a taste in stories and recipes of his eleven years as the White House chef under Presidents Bill Clinton and George W. Bush from a unique vantage point: The kitchen, which now will be presented to Sri Lanka on 16th May 2010 at the Mount Lavinia Hotel, where a state dinner inspired by Walter Scheib himself will be stately presented at the Empire Ballroom at price of LKR7000/-nett which includes dinner and beverages.

Style and ostentatious pride, is pretty much the core of Spanish life. Spanish men tend to maintain eye contact with females for longer, although this does not mean anything. Eating out in Spain is relatively cheap and meals are usually substantial instead of gourmet. The Spanish tradition of Tapas is a good way to sample the local food. Tapas are small dishes of snacks which are served anytime especially in small bars. They cover all types of foods from seafood to vegetables. Primarily Spain is a Wine drinking country with each region producing its own special wines, however there are several large breweries within Spain producing the light, lager-like beers popular everywhere. But one tradition that is deep-rooted in Andalusia like American jazz is soul to the US, flamenco dancing; a spanish art form with emotion that if done right creates a profound moving experience. And indeed the Laura Segovia flamenco dance troupe on 14th May 2010 will definitely move you. Their improvisations with a combination of acoustic guitar playing, singing, chanting, dancing and staccato handclapping with the synonymous attributes performed by the dancers which ignites passion, fervor, even tortured expressions but always striving for grace and dignity, will be the highlight at the Empire Ballroom which will be transformed to a Spanish Bodega. Tickets are priced at LKR1500/-nett which includes the show and tapas.

A 10 member group consisting of lifestyle media visited Mount Lavinia Hotel and was given a unique experience where they were given a familiarization tour of the historical heritage property along with a visit to the artifact museum where the gramophone still played a classic and indeed the epitome of the MLH; secret tunnel. The sport of open water swimming continues to expand Mount Lavinia Hotel supports this endurance sport

As we can see it Mount Lavinia Hotel has a substantial history covering 200 years and holds a very important place in the historical records and heritage of Sri Lanka, positioned prominently in status along with an event that has gained recognition; the 73rd Annual Two Mile Sea Swim organized by the Sri Lanka Aquatic Union which will be held on 7th March on shores of Mount Lavinia Hotel, will unveil a momentous event on the 6th of March when Mount Lavinia Hotel presents the Interclub Masters Open Water lkm Sea Swim named: Surf to Mount.

“We are honored to be a part of this global growth and Mount Lavinia Hotel that has a fabulous beach frontage that could enable to this kind of events to surface is proud to be hosting these events,” states Mr Anura Dewapura, General Manager of Mount Lavinia Hotel.

This ‘can-do’ and ‘get-up-and-go’ ambience enabled open water events like the InterClub Masters Open Water 1km Sea Swim on the 6th of March and the world renowned 73rd two mile sea swim on the 7th of March 2010 to more easily come into existence. While visionary and passionate swimmers like Akhry Ameer and Nethru Nanayakkara did the heavy leg work, focused on the logistics and, Mike Anthoniesz, Brian Pereira and Julian Bolling were instrumental in indirect ways.

A long distance pool event is any distance-based swimming event over 1650 yards (1508.8 meters), or a time-based event equal to or greater than one hour. It may be conducted in any body of water, either natural or man-made. A long distance open water event is a swimming event of any distance conducted in an open body of water, either natural or man-made.

The excitement and allure of endurance sports such as these open water events for busy lifestyles helps swimmers improve fitness, actively support for a healthy lifestyle through friendship and camaraderie which is very rare and it definitely keeps in contact with its members.

One member states, “All who partake in the event are either fitness swimmers, competitive swimmers and noncompetitive swimmers. We are pool swimmers and open water swimmers. We are fast and we are slow. We are young and we are old. We are men and we are women. What we have in common is we love to swim. When we are swimming, we are certainly having fun.”

Some rules on open water sea swims are as such:

▪ Open water swimming courses are clearly marked with distance markers, turn buoys and, occasionally, mid-course buoys, ropes or lines.

▪ In international events, swimmers must wear a transponder on each wrist for timing and finishing results. Athletes are disqualified for finishing without the transponders.

▪ Boats with the Head Referee, technical officials, medical personnel, media representatives and photographers are permitted on the course.

▪ Athletes start races in front of the rope during in-the-water starts or by diving from a floating start platform, depending on the race course.

▪ Athletes can be disqualified for making intentional contact, obstruction or interference with another swimmer. Such unsportsmanlike conduct is judged solely by the Head Referee, who is located in an escort boat.

▪ Warnings are given with a whistle by the Head Referee. At the first rule infraction, the Head Referee shows a yellow flag to the athlete with a card bearing their number. For the second infringement, athletes are shown a red flag and a card bearing their number, and can be asked to immediately leave the water.
